A wonderful listen. I’m reminded of the memoir Heat in which Bill Buford, an American and an admirer of Italian food, does an apprenticeship stint in an Italian hill town and is taken aback by how much meat, fresh and cured, makes its way onto the plate. I wonder how someone from Turin would fare with bamboo shoots.
